# Directions:
01 - Preheat the oven to 350°F. Grease and line two 8-inch round pans with parchment paper and lightly flour the sides.
02 - Whisk the all-purpose flour, baking powder, and salt together in a medium bowl until evenly combined.
03 - In a large bowl, beat the softened butter and granulated sugar with an electric mixer on medium-high until light and fluffy. Add the eggs one at a time, beating until each is incorporated, then mix in the vanilla.
04 - With the mixer on low, add the flour mixture and milk to the butter mixture in three alternating additions, beginning and ending with the flour. Fold in the sprinkles gently to avoid excessive color bleed.
05 - Divide the batter evenly between the prepared pans and smooth the tops. Bake on the center rack for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
06 - Let the cakes cool in the pans for 10 minutes, then invert onto a wire rack, remove parchment, and cool completely before assembling.
07 - Beat the softened cream cheese and butter together until smooth. Gradually add the sifted powdered sugar and mix until combined. Stir in the vanilla, add 2–3 tablespoons of milk to reach a spreadable consistency, then fold in the sprinkles. Chill until slightly firm.
08 - Place one cake layer on a serving plate. Spread a generous, even layer of the funfetti dip over the surface. Top with the second cake layer, then frost the top and sides with the remaining dip, smoothing with an offset spatula.
09 - Press extra sprinkles and optional candies onto the frosted cake as desired. Refrigerate the assembled cake at least 30 minutes to set the frosting before slicing.
